A little history about Cardamom

Latin name of cardamom: Eletarria cardamomum

Family Zingiberaceae

Legend has it that Cleopatra, very much in love with Mark Antony, burned cardamom scents before their romantic rendezvous.

It is a robust, perennial, herbaceous plant, 2 to 5 meters high, which grows at medium altitude in tropical rainforests.

It is a plant with thick rhizomes that give white flowers veined with red, cardamom is a dry capsule type fruit.

Each capsule contains 10 to 20 black and fragrant angular seeds. The fruits are hand-picked in India during the period from September to December.

Ginger and turmeric are members of the same plant family as cardamom.

This spice, which is the queen of spices next to the king pepper, often has its name distorted, it is cardamom and not cardamom n e.

Cardamom is the typical spice of Indian cuisine, it is used in the composition of a curry, Massala and chai tea.

It should be noted that it is one of the most expensive spices after saffron and vanilla.

Reduced to powder, it loses its fragrance very quickly.

Cardamom Treatment

In order to obtain cardamom essential oil, the cardamom seeds are flattened and then steam distilled for 5 hours before a purification and agitation phase. This is followed by an evaluation before export. This is a fairly expensive spice, as its production requires a very substantial amount of labor.

Origin of cardamom

There are different varieties of cardamom, white, green, beige or brown. The color will vary depending on the drying technique.

It is mainly native to India and Sri Lanka but it is also grown in Guatemala, which is the world's leading exporter of these precious green capsules, as well as in Tanzania, Vietnam and Cambodia. It is green, then turns yellow and begins to detach, which means it is time to harvest it.

There is another quality: black or brown cardamom. It is a cousin of green cardamom, but larger, rougher, with a more powerful, smokier scent and more used in savory preparations.

Scent of cardamom

It goes well with all olfactory families and especially colognes. It is used in both women's and men's perfumes, they go particularly well with the woody family, the chypre family, the oriental family.

Guatemalan cardamom is more appreciated in perfumery than that of India, because it is purer and more aromatic, and therefore more appreciated by perfumers.

Olfactory description of cardamom

This is a fragrance that I particularly like, which is classified in the fresh spices, slightly camphorated, very aromatic with a eucalyptus and rosemary effect, with a hint of pepper and lemon. It is therefore both spicy and aromatic.

It goes well with the chocolate, coffee and tea note and with all other spices. It also goes very well with all other citrus fruits because of its rising hesperidic facet, extremely invigorating.

Other fresh spices:

  • Coriander seed
  • Pink pepper
  • Timut pepper
  • Ginger
  • Juniper berries

Cardamom in the Bahisht Aroma Collections

In reference to the chai beverage, Vangelis' Vanilla Collection by Bahisht Aroma includes a number of spices, including cardamom, clove, pepper, and cinnamon. A powerful scent that combines the softness of vanilla with the power of spices and woods (patchouli, vetiver, cedar, and sandalwood). It's a hot vanilla flavour.

Memory of many trips to India, it is a meeting with Vangelis in a palace of Rajasthan in India mysterious and intriguing, his face is dressed in a colorful turban, he is tasting a chai tea in which the spices crackle.

Perfumes containing cardamom

It is a spicy note that the great perfumer Jean-Claude Ellena particularly appreciates. A note that was initially more masculine than feminine, we now see it more and more in women's perfumes, but especially more and more in so-called confidential niche perfumery (see Confidential perfumery or niche perfumes ).
